The Bikini Cocktail

Yields 10 servings

For the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Premix (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Method

Making the Syrup: Place every components inside a saucepan, bring to a simmer, agitating to dissolve. Then, remove from the burner allowing it to cool fully. Decant into a clean bottle, seal and store in the fridge, it will last for around a month.

Preparing the Cocktail Base: Combine all the spirits and syrup into one sizeable container, leave to sit for 60 minutes, then pass it through , ideally through a fine cloth, so it's completely strained.

For serving: Measure 85ml of the premix into a stirring glass filled with ice, and stir carefully for a minute to cool it down. Filter into a frosted cocktail glass or equivalent, top with a few cranberries and complete it with a light spray with the mandarin essence over the drink.
